Ingredients

• 2 ounces gluten-free pasta*
• 16 ounces cherry tomatoes
• 1 handful fresh basil
• 1/2 cup olives
• 1/2 cup fresh mozzarella pearls
• 1/2 cup red onion

Garlic Basil Salad Dressing

• 1/3 cup rice wine vinegar
• 2/3 cup olive oil
• 1 handful fresh basil
• 2 cloves fresh garlic
• Salt and pepper, to taste

*can substitute gluten-free pasta with Zoodles for a low-carb option

Instructions

1. Cook pasta according to package instructions.
2. Make the salad dressing by placing all ingredients in a blender and blend until smooth and green.
3. In a large bowl place pasta, then vegetables and cheese. 
4. Pour in salad dressing and toss to coat adding salt and pepper to taste.
