Ingredients
2 Large English Cucumbers, sliced
5 Tbsp Light Mayonnaise
2 tsp Lemon Juice
1 tsp Milk or Milk Alternative
1-2 Garlic Cloves, minced
1/4 tsp Black Pepper
1/2 cup Red Onion, sliced
3 Tbsp Dill, chopped
Instructions
Toss the sliced cucumbers with a pinch of salt and lay them in a dish or bowl lined with a towel. You can layer the cucumbers on top of one another depending on the container size you use - just separate each layer with a towel. Let them rest for about 30 minutes.
In a bowl, mix together the mayo, lemon juice, milk, garlic, and black pepper. Stir in the red onion and dill.
Once the cucumbers have drained, toss them with a fresh towel to wipe off any excess liquid and salt. Place the mayo mixture into a large bowl and then fold the cucumber into it until all of the cucumber is coated.
Season with additional salt to taste, and enjoy!
