Ingredients
30 medium (shelled) Shrimp (or Chilled cocktail shrimp cut in thirds )
1 Avocado (Diced )
1/2 small Red Onions (Diced)
2 tbsp Cilantro (Coriander) (Chopped )
1/2 medium Bell Peppers (Diced)
2 lime Fresh Lime Juice
1 tsp Kosher Salt
1/2 tsp Black Pepper
2 serving Grain Free Tortilla Chips
Directions
1. Add cocktail shrimp, avocado, bell pepper, red onion, cilantro, lime juice, salt, and black pepper to a bowl and gently mix until combined. Refrigerate until ready to eat.
2. Serve with a side of grain-free tortilla chips.
Notes
Protein options: The cocktail shrimp can be substituted with boneless, skinless, shredded rotisserie chicken.
