What Is Olive Oil?
Extracted from the fruit of the olive tree, olive oil ranges in color from pale yellow to rich gold, depending on the ripeness of the olive and the method of extraction. While modern methods include crushing the olives and separating oil from the pulp in a centrifuge, traditional methods of pressing have proven to be the most beneficial. Olive oil is graded on a system: refined, virgin, and extra-virgin. EVOO is extracted from the olives using pressure in a process called cold pressing. This results in less acid, a fresher flavor, and a retaining of the compounds that make olive oil beneficial.
