When you're 56 and refuse to eat processed food but still need dinner on the table fast...
These chicken fajitas are my go-to when I want maximum nutrition with minimal effort.
The secret? Making your own fajita seasoning without all the fillers, sugars, and questionable ingredients in store-bought mixes.
Ingredients
1 lb chicken breast or thighs, sliced
2 red bell peppers, sliced
1 large sweet onion, sliced
Extra virgin olive oil
5 tablespoons homemade fajita seasoning (divided)
1 tablespoon water
Michele's Homemade Fajita Seasoning:
1 tablespoon chili powder
1 tablespoon ground cumin
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon kosher salt
1 teaspoon ground black pepper
Instructions
Mix chicken with a little EVOO and 1 tablespoon fajita seasoning. Set aside.
Slice peppers and onion while chicken marinates.
Sauté chicken until cooked through. Remove and keep warm in oven.
Sauté peppers and onions over medium heat with 3 tablespoons fajita seasoning until peppers are soft and onions caramelized.
Return chicken to pan, raise heat to medium-high.
Add final 1 tablespoon fajita seasoning mixed with 1 tablespoon water for that perfect sizzle!

We skipped the tortillas and rice to make sure we finished all those beautiful vegetables instead of filling up on grains.
