- ¼ cup coconut flour
- 1 serving Vegan protein powder
- 1 serving * egg substitute
- 1/3 cup of unsweetened vanilla almond milk
- 1/2 tsp vanilla extract
- 2 Tbsp almond butter
- 1/2 cup organic blueberries
* Egg substitute: Mix 3 tbsp water with 1 tbsp chia or ground flax seed per egg being replaced. Let it sit for 5 minutes.
- Prepare egg substitute.
- In a medium bowl, mix flour and protein powder.
- Add in seeds, egg substitute, milk, and vanilla. Set aside for 10 minutes.
- Grease a skillet with coconut oil and place on stove over medium heat.
- Cook each pancake 2-3 minutes per side.
- Top with almond butter and blueberries.
