Protein Pancakes

INGREDIENTS

  • ¼ cup coconut flour
  • 1 serving Vegan protein powder
  • 1 serving * egg substitute
  • 1/3 cup of unsweetened vanilla almond milk
  • 1/2 tsp vanilla extract
  • 2 Tbsp almond butter
  • 1/2 cup organic blueberries

* Egg substitute: Mix 3 tbsp water with 1 tbsp chia or ground flax seed per egg being replaced. Let it sit for 5 minutes.

INSTRUCTIONS

  1. Prepare egg substitute.
  2. In a medium bowl, mix flour and protein powder.
  3. Add in seeds, egg substitute, milk, and vanilla. Set aside for 10 minutes.
  4. Grease a skillet with coconut oil and place on stove over medium heat.
  5. Cook each pancake 2-3 minutes per side.
  6. Top with almond butter and blueberries.
